Well yesterday I had a hankering for comfort food on a hot day… So of course I thought of chili, and decided to make my own version of Sloppy Joes. The result was a large pot of spicy deliciousness! But it is not low in sodium, so have this treat only occasionally. Tastes great with an ice-cold glass of root beer, ginger beer, regular beer…or anything cold and bubbly! It was a hit for all members of my family. Hope you enjoy it!
3 lbs ground beef
2 cups chopped carrots
1 large onion
3 cloves garlic
1 sweet red bell pepper
1 , 14 oz tin tomato and molasses baked beans
1, 19 oz tin black beans
1, 28 fluid oz tin diced tomatoes
1.5-2 TB fancy molasses
1 tsp garlic salt
1/2 TB chili powder
1.5 TB taco seasoning
1 tsp coriander
1 TB cornstarch and a bit of water.
2 handfuls chopped cilantro
1 cup shredded Monterey jack cheese
Brown ground beef. While it is cooking, run the veggies through a food processor until finely processed.
When the beef is browned add veggies, cook for about 4 minutes, until fragrant and veggies are softened.
Add beans, tomatoes, molasses, seasoning, and one handful of cilantro, mix well, cook for about ten minutes until juices started rendering.
Mix about 1 TB cornstarch with a little water, add to the mixture to thicken.
Simmer for at least 45 minutes.Warm buns in oven in the meantime, then cut in half. Fill each half with meat mixture, top with cheese and sprinkle with fresh cilantro
